Who’s sitting at home being a couch potato while drinking a bottle of wine during quarantine? How about we get off of our couches and put that wine to an even yummier use, let’s make some pasta with red wine chicken today!
Cook Time: 1 hour and 10 minutes
- Step 1: Dice your chicken breast tenderloins and thinly slice your vidalia onions, set aside. Place a pot with a lid on your stop and turn the heat on high. Add 1 tbsp of vegetable oil, 1 tbsp of minced garlic, and 1 tsp of meat tenderizer.
- Step 2: Once your oil is heated add your chicken to the pot and stir to fry the diced chicken until cooked or golden. Add your sliced onions and put the lid on your pot for 5 minutes.
- Step 3: After 5 minutes, remove the lid from the pot and put in 1/4 cup of dark brown sugar. Stir ingredients together, then put the lid again of the pot and reduce the heat to medium. Cook for 10 minutes to caramelize. *Remember to check at the 5 minute checkpoint to prevent burning.
- Step 4: After 10 minutes, remove the lid from the pot and add 1 cup of red wine and 1 tsp of paprika. Stir to combine ingredients. Put lid on pot once again and reduce the heat to low. Cook for 20 minutes. *Remember to check at the 10 minute checkpoint to prevent burning.
- Step 5: In another pot, add water and allow to boil. Once the water is boiling add your pasta and cook until tender. Strain the water and set pasta aside.
- Step 6: Chop up 1 cup of parsley and set aside. After the 20 minutes are up for your chicken, remove the lid and add your chopped parsley. Stir to combine, approximately 1 minute.
- Step 7: After incorporating your parsley, add your pasta and 1 cup of Italian blend cheese to your pot with chicken. Add salt and pepper per your preference, stir to combine. Place lid on pot and cook for 5 minutes.
- Step 8: Remove the lid from the pot and turn off your stove. Serve your pasta with red wine chicken and top it off with some grated Parmesan cheese. Enjoy!
