Brazilian Carrot Cake

Who here has a sweet tooth? I know I do, so let’s try to satisfy it by putting our baking expertise to the test during our COVID-19 quarantine. Today we’ll be making some delicious Brazilian carrot cake in our kitchens.

Ingredients
3 cups of Baby Carrots
4 Eggs
1 cup of Vegetable Oil
1 1/2 cups of White Sugar
2 cups of Cake Flour
1 cup of Cornstarch
1 tbsp of Baking Powder
1 tsp of Vanilla Extract
1/4 tsp of Salt
(for frosting)
1 can of Condensed Milk
1 can of Table Cream
5 tbsp’s of Unsweetened Cocoa Powder
1 tbsp of Butter
  • Step 1: Preheat your oven to 350 degrees Fahrenheit. Then grease a medium to large cake pan or Pyrex and set aside.
  • Step 2: In a blender, puree 3 cups of baby carrots and 4 eggs. Once the carrots are pureed and the eggs are incorporated, pour the mixture into your mixer bowl. Add 1 cup of vegetable oil, 1 1/2 cups of white sugar, 1 tsp of vanilla extract, and 1/4 tsp of salt. Mix ingredients together.
  • Step 3: Next add 2 cups of cake flour, 1 cup or cornstarch, and 1 tbsp of baking powder to the mixer bowl. Mix ingredients together until the mixture is consistent.
* It should look like this.
  • Step 4: Once your mixture is consistent, pour it into your pre-greased medium to large cake pan or Pyrex, then place it into your preheated oven. Cook for approximately 55 minutes or until a wooden skewer comes out clean once poked into the cake. *The larger the pan you use, the less the bake time, so remember to check on your cake regularly.
  • Step 5: Once your cake is baked, turn off you oven and put the cake aside to cool. Now let’s start making our frosting. Put a medium pot on your stove and turn the stove on high heat.
  • Step 6: Add 1 tbsp of butter to your pot and allow it to melt. Once the butter is melted, add 1 can of condensed milk and 1 can of table cream to your pot. Stir continuously for 6 minutes on high heat.
  • Step 7: After 6 minutes of continuous stirring, add 5 tbsp’s of unsweetened cocoa powder to the mixture. Lower your heat to medium and stir continuously for 4 minutes. *If you wish to have a sweeter tasting frosting, you could substitute the unsweetened cocoa powder for 5 tbsp’s of Nesquik.
  • Step 8: After a total of 10 minutes of continuous stirring, your mixture should have thicken. Once it thickens, turn off your stove heat.
  • Step 9: Remove your cake from the cake pan, it should have cooled enough by now, and put it on your cake stand or plate. Add your frosting to your cake while it is still hot since it will thicken more once it’s cooled. *If you opted to use a Pyrex, you may leave the cake in the Pyrex and just add your frosting mixture on top.
  • Step 10: Once the cake and frosting is completely cooled, you may cut yourself a slice. Enjoy!
