Blueberry Muffins to Die For

Hello everyone! Today let’s take some time to practice our baking skills by making some blueberry muffins that are to die for.

Ingredients
1 tbsp of All Purpose Flour
1 pint (2 cups) of Blueberries

(For Batter)
2 tsp’s of Baking Powder
1 tsp of Baking Soda
1 cup of All Purpose Flour
1 1/2 cups of Cake Flour
1/2 tsp of Salt
3/4 cup of White Sugar
2 Large Eggs
1/2 cup of Milk
1/2 cup of Vegetable Oil
1 1/2 tbsp’s of Vanilla Extract
1/4 tsp of Lemon Extract
1 tsp of Ground Cinnamon

(For Crumble Topping)
3 tbsp’s of Butter
1/2 cup of Dark Brown Sugar
1 tsp of Ground Cinnamon
1/4 tsp of Ground Nutmeg
1/4 cup of All Purpose Flour
  • Step 1: Preheat your oven to 350 degrees Fahrenheit. Then, take your pint of blueberries, thoroughly wash and dry them, and toss the blueberries in a medium bowl along with 1 tbsp of all purpose flour and set aside.
  • Step 2: In a large mixing bowl, add 1/2 tsp of salt, 3/4 cup of white sugar, 2 large eggs, 1/2 cup of milk, 1/2 cup of vegetable oil, 1 1/2 tbsp’s of vanilla extract, and 1/4 cup of lemon extract. Whisk ingredients to combine.
  • Step 3: In another mixing bowl, add 2 tsp’s of baking powder, 1 tsp of baking soda, 1 cup of all purpose flour, 1 1/2 cup of cake flour, and 1 tsp of ground cinnamon. Whisk ingredients to combine.
  • Step 4: Gradually add dry ingredients to wet ingredients and thoroughly whisk to combine. Once all ingredients have been combined, fold in the flour covered blueberries with the batter.
  • Step 5: Line a muffin pan with cupcake cups or oil and flour. Pour the blueberry muffin batter into the cupcake cups/ muffin pan. Set aside. *This batter makes anywhere between 12-16 muffins.
  • Step 6: In a small bowl, add 3 tbsp’s of melted butter, 1/2 cup of dark brown sugar, 1 tsp of ground cinnamon, 1/4 tsp of ground nutmeg, and 1/4 cup of all purpose flour. Whisk to combine.
  • Step 7: Take your crumble mixture and sprinkle some on each of the muffins. Add the muffin trays to your preheated oven and bake for 30 minutes at 350 degrees Fahrenheit until golden or until a wooden toothpick comes out clean once inserted.
  • Step 8: After 30 minutes,turn off your oven and remove the muffin trays. Set aside and enjoy once cooled.
