Balsamic-Glazed Pork Loin

By: EB

Hello everyone, I bet you all are tired of quarantine by now so let’s experiment in our kitchens to keep us busy. Today we’ll be making some yummy balsamic-glazed pork loin!

Ingredients
Pork Loin (approximately 4.25 lbs)
1 tbsp of Olive Oil
1 tbsp of Minced Garlic
(For Rub)
1 tbsp of Garlic Powder
1 tbsp of Onion Salt
1 tbsp of Rosemary
2 tsp’s of Italian Seasoning
1 tsp of Meat Tenderizer (unseasoned)
1 tsp of Black Pepper
(For Glaze)
1/2 cup of Balsamic Vinegar
1/2 cup of Maple Syrup

Cook Time: 2 hours (approximately 35 minutes per lb.)

  • Step 1: Preheat your oven to 350 degrees Fahrenheit.
  • Step 2: Let’s make the rub. In a bowl add 1 tbsp of onion salt, 1 tbsp of garlic powder, 1 tbsp of rosemary, 2 tsp’s of Italian seasoning, 1 tsp of meat tenderizer, and 1 tsp of black pepper. Stir to combine.
  • Step 3: Place your pork loin onto a cutting board. Use a kitchen (meat) hammer to tenderize the pork loin. Then, pierce the pork loin multiple times on both sides with a fork to help keep the pork moist while cooking and to adsorb more flavorings from the rub. Add 1 tbsp of olive oil to it and rub the oil onto the pork loin.
  • Step 4: Once the pork loin is oiled, generously add the rub to it. After adding the rub, place 1 tbsp of minced garlic along the top of the pork loin.
It should look like this.
  • Step 5: Place your pork loin into a deep tray or Pyrex, then place it into your preheated oven. Set your cook time to 2 hours. *It takes approximately 35 minutes per pound to cook so you may need to modify your cook time based on the weight of your pork loin.
  • Step 6: After placing your pork loin into the oven, make your glaze. To make the glaze, add 1/2 cup of balsamic vinegar and 1/2 cup of maple syrup to a bowl and stir. Set aside.
  • Step 7: After about an hour, start adding your glaze regularly to the pork loin. You should have about 5 layers of glaze on it by the end of the cook time.
  • Step 8: After 2 hours or your modified cook time, turn off your oven and remove the pork loin. Slice your piece and serve. Enjoy!
It should look like this by the end of your cook time. *When serving, add some of the fallen glaze from your tray to the pork loin slice for an even yummier flavor.

I hope that everyone enjoyed today’s recipe and remember to STAY SAFE!
